Maipo Valley and the structured red wines

Just south of Santiago you will find Maipo Valley, which is considered the historic heart of the country's wine production, as the very first vines were planted here in the middle of the 1500s. The valley benefits greatly from its Mediterranean climate, the nutrient-rich alluvial soil, and the fresh meltwater from the Andes Mountains. The pronounced differences between day and night temperatures help preserve the grapes' natural acidity, creating the perfect foundation for a long life in the bottle.

The valley is especially recognized for growing Cabernet Sauvignon of very high quality, and the area is often referred to as South America's answer to Bordeaux. The aging vines produce quite a low yield, but in return an enormous concentration is achieved in the grapes. This results in structured and complex red wines that are capable of developing beautifully and elegantly in the wine cellar over several decades.

In Colchagua Valley, the climate is characterized by warm, dry summers combined with cool winds from both the Pacific Ocean and the Andes Mountains. The strong sunlight in the valley also helps the grapes form a significantly thicker skin.

This thick skin provides a high concentration of both pigments and tannins, which in practice function as the wine's own natural preservatives. How to prepare an older Chilean wine

When serving a wine with many years behind it, calm and precise handling is required to bring out the absolute best tasting experience. The older vintages are often delicate, and gentle preparation is essential so that you do not disturb the development the wine has undergone over the decades.

  1. Standing the bottle upright: Let the bottle stand upright for 24 to 48 hours before opening it. In this way, all natural sediment and any tartrate crystals can safely sink to the bottom, so it does not mix with the wine during pouring.
  2. Opening with care: A cork with many decades behind it can often be fragile and porous. We recommend using a special two-pronged corkscrew, which grips the outer sides of the cork so it can be carefully eased up without crumbling.
  3. Decanting and aeration: Older vintages benefit most from being aerated for a very short time, typically a maximum of between 10 and 30 minutes. Slowly pour the wine into a decanter, and stop calmly just before the sediment reaches the neck of the bottle, so the clean wine is separated neatly.
  4. Temperature: Make sure to pour the wine at a controlled temperature of between 15 and 18 degrees. If the wine becomes too warm, the alcohol will dominate, and the fine, mature flavor notes will evaporate before you get to enjoy them.
